WHITE CHOCOLATE AND DRIED CRANBERRY COOKIES

1 and 1/2 cups of unsalted butter softened
2 cups of sugar
2 cups of brown sugar
4 eggs
2 tsp vanilla
4 cups flour
5 cups oatmeal
1 tsp salt
2 tsp baking powder
2 tsp baking soda
36 oz white chocolate chips
3 cups dried cranberries or dried cherries
Cream butter and both sugars about 5min in stand up mixer with paddle attachment. Add eggs one at a time until incorporated then add vanilla. In a food processor, process oatmeal to a fine powder. Mix together processed oatmeal, flour, salt, baking powder and soda. Add dry ingredients to wet ingredients a little at a time and then add chips and berries.
Form into balls and place on baking sheet covered with parchment paper, space balls about 2 inches apart and refrigerate for 30 minutes.
Bake for 10 minutes at 375
Makes about 80 large cookies. This recipe can be cut in half.
